Five of My Favorite Northern Noodle Dishes That Are Easy to Make and Taste Great

First, small, easy-to-make breads

Things you need:

  • Four eggs
  • 400 grams of flour for all purposes
  • 50 grams of sugar that is white
  • 30 grams of oil for cooking
  • 3 grams of yeast

You can make these little breads with just eggs and flour. The outside is golden and crispy. What about the inside? They are soft and fluffy, and they have a great texture that makes them easy to pull apart. You won't have to knead until your arms hurt, either. This method is refreshingly simple; you'll learn it quickly.

Steps:

  1. Put four eggs in a bowl and break them open. Put in 30 grams of oil and 50 grams of sugar. Mix everything together until it's all mixed in.

  2. Next, add 400 grams of flour and 3 grams of yeast. You don't need to add any water.

  3. Mix everything together until it looks like a mix that is a little crumbly. After that, use your hands to knead it into a smooth dough. Once it looks like this,

  1. Roll the dough into a long strip and cut it into equal pieces. Make a neat round ball out of each piece. Push it down with the heel of your hand. Wrap the dough balls in plastic wrap and let them rise until they feel very light. That's when you know they're ready to be fried!

  1. Fry them in oil that isn't too hot. Keep the flame low and turn the breads often so they cook evenly. When they look like this, golden,

  1. You're good to go! These breads are ready to be eaten because their outside is so crispy. Why not give it a try if this sounds like something you'd like?

Second on the Menu: Pancakes with Scallions

If you usually steam buns with flour, this is a chance to try something new. You don't have to knead or roll anything with this lazy cook's method; just stir it well with chopsticks. The end result? Pancakes that are softer than bread. The method couldn't be easier.

What you need:

  • 500 grams of flour for all purposes
  • 10 grams of sugar that is white
  • 5 grams of yeast that isn't wet
  • 350 to 400 ml of warm water
  • A handful of chopped green onions
  • 1 tablespoon of five-spice powder
  • Add salt to taste

Steps:

  1. Use 500 grams of flour to start. Add 10 grams of sugar and a packet of yeast (5 grams) to the mix. Add 400 ml of warm water and stir until the batter is thick and there are no lumps. Close it tightly and let it rise until it is twice as big and has a honeycomb shape.

  2. Now, add one tablespoon of five-spice powder and the chopped scallions.

and add salt to taste. Stir again to let out any air that is stuck. After that, put oil on your hands and roll the mixture into a ball.

  1. Get a pan ready by greasing it. Put the ball in the pan and press it down until it looks like a small pancake. Cook until both sides are golden brown and done.

You can make these pancakes as soft as you want them to be, and they have a great scallion flavor that you won't be able to resist. Everyone loves them. If this makes your mouth water, it's time to start cooking for your family!

Third Dish: Scallion Egg Pancakes—Fluffier than Clouds, Bursting with Scallion Flavor, and Easier to Make than Dumplings or Buns!

Things you need:

  • 500 grams of flour for all purposes
  • 5 grams of salt
  • An egg
  • 3 grams of yeast
  • 230 ml of warm water

How to:

  1. Mix 5 grams of salt into 500 grams of flour. Add 3 grams of yeast and 230 ml of warm water to the egg. Keep stirring until the mixture is crumbly.

  2. Add a handful of chopped scallions and knead the dough until it is smooth. Make a big, thin sheet by rolling it out. Press out round shapes with a mold or a cup. You can use the leftover dough again, so don't throw it away!

  1. Put cling wrap over the dough circles and let them rise until they are much bigger. Then, put them in a pan that has been greased and heated up. Cook until both sides are golden brown, and there you go! You've made some fluffy, delicious pancakes, and it's easy to do.
